2 medium sized Zucchini, thinly sliced into half moons
2 medium sized Yellow Squash, thinly sliced into half moons
1 cup Cherry Tomatoes, halved
1/4 cup pitted Kalamata Olives, chopped
2 oz Feta cheese, cubed or crumbled
1 TBSP chopped fresh Basil
1 TBSP chopped fresh Mint
1 TSP Lemon Zest
3 TBSP fresh Lemon Juice
1 TBSP Olive Oil
1/4 TS P Granulated Garlic
Kosher Salt and fresh Black Pepper
In a large serving bowl whisk together the lemon zest, juice, olive oil, granulated garlic, salt and pepper.
Add all of the ingredients to the bowl and gently toss to coat them in the lemon dressing. Taste for seasoning and serve.
